This homemade dried sour cherry cake is a fragrant and easy dessert that combines a tender batter with the delightful sweet-and-tart notes of dried sour cherries. It is perfect for enjoying with afternoon coffee or as a tasty homemade treat for the whole family.
Ingredients
150 g dried sour cherries
3 eggs
150 g sugar
100 ml vegetable oil
150 ml milk
250 g flour
1 packet baking powder
1 packet vanilla sugar (or vanilla extract)
1 pinch of salt
50 g walnuts (optional)
Powdered sugar for dusting
Instructions
Pour a little warm water over the dried sour cherries and let them soak for about 10 minutes to soften. Drain them well.
In a bowl, beat the eggs with the sugar until the mixture is pale and fluffy.
Add the oil and milk, and mix well.
In a separate bowl, combine the flour, baking powder, vanilla, and the pinch of salt.
Gradually add the dry ingredients to the wet mixture and stir until you have a smooth cake batter.
Add the dried sour cherries and the chopped walnuts (if using). Stir gently.
Pour the batter into a greased and floured cake pan or a small rectangular baking dish.
Bake in an oven preheated to 180°C for about 35–40 minutes. Check for doneness using a wooden skewer. Let the cake cool, then dust it with powdered sugar and serve.
Tip for an even tastier cake
For a richer flavor, you can soak the dried sour cherries in a little orange juice beforehand. If you enjoy a sweet-and-sour combination, add some grated orange zest to the batter as well.
