Ingredients
150 g fine rolled oats
100 g dried aronia berries
100 g flour
80 g walnuts
100 g brown sugar
100 g butter
1 egg
1 tsp baking powder
1 tsp vanilla extract (or 1 packet vanilla sugar)
1/2 tsp cinnamon
2–3 tbsp fresh milk
1 pinch of salt
Instructions
Place the dried aronia berries in a small bowl and cover with a little warm water. Let them soak for about 10 minutes, then drain well.
In a large bowl, combine the rolled oats, flour, baking powder, cinnamon, and the pinch of salt.
In a separate bowl, cream the softened butter with the sugar. Add the egg and vanilla, and mix well.
Add the dry ingredients to the butter mixture. If necessary, add 2–3 tablespoons of milk until a thick, sticky dough forms.
Add the dried aronia berries and chopped walnuts. Mix everything together to ensure they are evenly distributed. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper. Press them down lightly with a spoon.
Bake the cookies in an oven preheated to 180°C for about 12–15 minutes, until the edges turn slightly golden.
Allow the finished oatmeal cookies to cool completely before serving.
